I knew I had to re-create

Rewind back to a couple of weeks ago, my neighbor and I were going to watch an OKC Thunder Playoff game at my house (Thunder Up!), it had been a crazy busy day (as if there’s EVER a “normal slow” day in my life lol) but I digress, the point of the story is, I had no time to cook anything for the game, but I did have some chicken in the refrigerator, so I told him that if he’d bring something to go on the side, I’d toss the chicken on the grill.

He showed up with portobello mushrooms, yellow summer squash and bell peppers. Since we were grilling the chicken, I figured we might as well throw the vegetables on the grill as well, and what better way to grill veggies than on skewers!

I added a red onion to the mix, simply brushed the veggies with Enzo Garlic Olive Oil (YUM!) and tossed some steak seasoning on them.

They were some of the best veggies I’ve ever had in my life (maybe best ever!) so I knew I had to re-create them the next day and add them to Little Leopard Book!

As I’ve come to find out in almost 3 years of food blogging, people love skewers and people love simple, this, my friends, is both!

As much as I love my chicken and steak skewers, these vegetable skewers are just as good and a great option for your vegetarian (and vegan!) friends at Summer BBQ’s… or to go right along with those steak skewers for you carnivores ;-)
