【地中海蔬食】糙米咖哩燉飯

I've been really into the Mediterranean cuisine; it is low in oil and less processed; furthermore, it features the local fresh seafood instead of other red or white meat, besides, lots of fresh veggies, which are my favorite. In a word, Mediterranean cuisine is much more natural and healthy.

As to curry, I've never really tasted any curry cuisines before recently getting a chance to have that in a friend's home. I used to associate "curry" with "rice," and thought I had to have the two together. Owing to my lack of interest in rice, the idea of having a curry dish had never come to me. Yeah, when I tasted the curry sauce made by my friend, I didn't have the sauce with rice, but "bagel" instead, blueberry bagel. Fabulous! Since that moment I've started to fall in love with this awesome stuff---what a fascinating combination of spices and anything you feel like to mix with it.

Curry dishes are easy to make and ready to eat. With no more than two curry pieces, you can make a small dish for yourself within ten minute. Personally I prefer spicy curry with a heavier taste, so I suggested adding some more curry powder in addition to the spicy curry pieces, which will make your curry dish even more mouth-watering.

Recently I’ve experimented with fruit ingredients to make curry dishes, because it is summer time now and we should not miss the abundant fruits in season. I used an apple and an onion, which have been familiar matches with curry, some raisins (maybe a teaspoonful), four to five pieces of pineapples cutting into thin slices and a medium mango. Sounds weird? It might be, apparently. But believe it or not, it tasted amazingly good! Especially the mango cubes melted with the liquid really gave the sauce a uniquely fresh flavor. The use of fruit reduces the spiciness of the hot curry sauce but adds some more sweet and refreshing elements. I believe it would be very suitable for people who like the smell of curry but prefer a lighter taste, rather than a thick one.

材料:蘋果絲、印度咖哩粉、芋頭塊、馬鈴薯塊、紅蘿蔔塊、咖哩塊、糙米、杏鮑菇等蕈類

作法:A.蘋果絲加橄欖油拌炒,加入印度咖哩粉,炒香,至蘋果脫水。再加入芋頭塊、馬鈴薯塊、紅蘿蔔塊、咖哩塊和水熬咖哩汁。

B.糙米煮飯,至八分熟時,拌入事前以橄欖油炒過的蕈類、杏鮑菇等,再煮至熟。

C.兩者混合,結合日式和義式燉飯的口感。
