Serves: Six View Veal Cuts
1 1/2 lbs ground veal
1 cup milk
3 lbs potatoes, peeled and quarted
2 Tbsp butter
1/4 cup fresh parsley, chopped
2 Tbsp fresh chives, chopped (optional)
2 cloves of garlic, minced
salt and pepper
1 onion, chopped
1/2 tsp dried thyme
2 Tbsp all purpose flour
2 cups chicken stock
1/4 cup ketchup
1 Tbsp Dijon mustard
2 cups frozen mixed vegetables
In pot of cold salted water, bring potatoes to boil; reduce heat and simmer covered, for about 20 minutes or until potatoes are tender. Drain well. Mash while adding milk; stir in butter, parsley and chives (if using). Season to taste with salt and pepper; set aside. Meanwhile, in shallow saucepan, brown veal over high heat. Reduce heat to medium; add garlic, onion, thyme and pepper. Cook, stirring for about 5 minutes or until onion is softened. Sprinkle with flour; cook, stirring for 1 minute. Pour in stock, ketchup and mustard; bring to a boil. Reduce heat and simmer, stirring often, for about 5 minutes or until thickened. Stir in vegetables; season to taste with salt. Spread into lightly greased 11x7 inch (2.5 L) glass baking dish or casserole; let cool slightly. Pipe or spread potatoes on top of veal. Bake in 400F (200C) oven for about 20 minutes or until bubbling hot and potatoes are golden. Broil for 2 minutes if desired.

Vegetarian Stock Cubes, dissolved in boiling water
Red Wine, White Wine or Beer
Vegetarian Gravy (prepare as per directions)
Topping:
Mashed Potato (Prepared "Instant", or real)
Grated Cheese
Breadcrumbs (Fresh or Dried)
If using dried TVP, bring the Wine or Beer and Stock to the boil, then add the dried TVP. Take off heat, cover and leave to soften.
In a saucepan, saute the chopped onions and carrots in the oil until softened. Add crushed garlic, then other chopped vegetables in order of required cooking time. Add soaked TVP and seasonings to taste. Use vegetarian gravy, wine or beer to make into a thick casserole consistency. Thicken as required.Pour into a casserole or baking dish. Spoon mashed potato over the top, then sprinkle with cheese and breadcrumbs. Bake or grill until the topping is golden-brown.Note: If you can't get dried TVP, you can use frozen or tinned vegetarian mince, or just use vegetables.If you're in a hurry, you can skip the baking stage.
