炸脂蓋 【所屬菜系】 魯菜 【特點】 色澤金黃，外酥裡嫩。 【原料】 羊五花肉500克，雞蛋一個（重約50克）。 醬油10克、大蔥15克、生薑15克、大蒜10克、濕澱粉10克、甜面醬15克、芝麻油15克。 【製作過程】 將羊肉洗淨放入冷水鍋內，煮約5分鐘使血水浸出，再撈出晾涼，切成長8厘米、寬2.5厘米、厚0.8厘米的片平放在盤內，加入醬油、蔥段、薑片、蒜片入籠蒸熟（約蒸90分鐘）取出，潷淨湯汁，去掉蔥、姜、蒜片。雞蛋打入碗內，加入濕澱粉攪勻成糊狀待用。炒鍋放入花生油，置中火上燒至八成熱（約200℃）時，將肉片逐一滾勻雞蛋糊放入油內，炸至九成熟時撈出，待油溫升至九成熱（約225℃）時，再投入肉片炸成金黃色撈出，將炸好的肉片切成斜塊，裝入盤內即成。將甜面醬與芝麻油一起拌勻裝於味碟內，再將蔥段、蒜瓣另盛一小碟，隨菜上桌佐食即成。
