Established in 1973, 700M altitude, the Hakushu Distillery is located in between two Japanese Nation Park, Southern Japanese Alps. and Eight Mountain, with very clean, soft water and cool forest air. It’s also the Saint-area for wild bird. Six pair of distillers can make more than 46 original whiskies. Actually, the original distillery was opened in 1973 but its 24 stills have now gone silent. The single malts come from the second, known as Hakushu Higashi (Hakushu East), which came on line in 1981. We are lucky to visit Hakushu at 11/28 and toured by their director. So now let’s back for some tasting in VIP room

白州 12yo 50% OB Hogshead 樽原酒

C: yellow gold

21 N: some orange peels, tangerine juice, a little medicine, some vanilla,佛手柑, citrus

22 T: medium, dry, good impact, tangerine juice, clean and soft

21 F: medium, some cool, hint of mint, very good wood cask

20 B: balanced, more tropical fruits come up after adding some water, citrus, sandal wood. Easy to drink

 

白州 12yo 50% OB Hogshead(Smoky) 樽原酒

C: light yellow

22 N: lightly smoke, some bacon, then some baked tangerine peels, followed by some flora, bloom some, green apple, then more white fruits, fragrant and elegant

21 T: light, smoky, dry, good impact, some tangerine peels

21 F: medium -> long, apple, flora, a little bitterness of orange peels at the end

21 B: good balanced both for N&T, not any aroma striking, very smooth and light smoke, enjoyable!

 

白州 12yo 50% OB Sherry Cask 樽原酒

C: dark amber

22 N: rich, deep sherry, some chocolate, raisin, sweet cooked apple, a little winery,

22 T: medium, dry, good impact, rich and good extension, raisin, red grape

21 F: long, good extension, some cherry, chocolate

21 B: good balanced, a well-behaved sherry, that’s why it become the based-whisky

C: gold, rose gold

23 N: light sherry, a little smoky, bacon, some ripe tangerine, some longan, cherry, dry fruits

22 T: medium, dry and good impact, apricot, some beautiful oak

22 F: long, a little smoky, tangerine juice, almond, fresh walnuts, more baked nuts, oak, good wood cask at the end.

21 B: good balanced both for n & T, complexes, and elegant. It worth to take some time waiting..

白州 1989/2009 62% OB Sherry Cask C#9O50021 TWE 10^th Anniversary

C: brown, dark amber, a little green at the edge

23 N: deep sherry, plum, ripe prune, winery black cherry, chestnut honey, followed by some dark toffee, chocolate, hint of match box

23 T: full, rounded, waxy, dry, very oil and creamy, plum, ripe and rich prune, chocolate, dry figs, some bitterness of orange peels, very good impact and powerful, very good texture

23 F: very long, some meaty, old leather, polished wood, dark chocolate, some ripe and rich fruit, prune, grapefruit, blackcurrant, plum, and then some mahogany, sandal wood at the end, good extension

22 B: good balanced both for N & T. One dram is enough to enjoy this sherry monster, it really a fainted-sherry cask.
