Remove and chill till ready to frost


The good thing about loaves is, it makes wonderful even slices for everyone. Enough of crusty sides and just the right amount of  frosting. And you can put almost anything you like in there. This Sunday morning I finally found my baking bone again … If you might’ve noticed, I haven’t blogged in a while and you can blame the crazy summer holidays and crazy hectic schedules for it. So busy that getting time out to do the things I usually would in the holidays also was a toughie. A trip to the spa, some shopping, some blogging … none of it happened. Today I woke up craving a simple date cake with a good frosting. And so it had to be. My darling son, had his own plans though, seeing the butter and eggs on the kitchen counter he announced …” mamma I want to make cupcakes !” ” Baby todays its mammas turn,” I said – “We’re eating a date cake”. ” Hmm … Ok he says, I’m going to make it for you !” So while he stood at the counter with his hands on the kitchen aid, I handed him out the ingredients, and my little chef with his cute tiny hands made me this lovely loaf cake :-)

Preheat oven to 180C and grease n line your loaf tin (I used a 3.5″ X 7.5″ tin ). Mix all the dry ingredients and set aside. In another bowl, beat together the sugar, eggs and vanilla. Slowly pour the melted butter combining it well. Add the flour mixture bit by bit, whisking gently after each addition until just combined. Now add the nuts and dates giving it another good stir and pour it into the loaf tin marie france.

Start with steaming and pureeing the dates. In a small saucepan, take the dates with about 5 tbsps of water and steam with lid covered for a few minutes. Take off heat, cool and make a paste either by mashing it with the back of a fork or in a grinder.

In another bowl beat the cream cheese to loosen it a little, with an electric beater. Add the fresh cream and the date puree and beat together till well combined and thick enough to spread. Remove and chill till ready to frost.

To frost, simply slather over the loaf. I would recommend sliced the loaf in half and doing a layer of frosting in between too. The recipe is enough for 2 layers.

Garnish with walnuts and sprinkle some cinnamon sugar alexander hera.
